2 cups shredded zucchini
1/2 cup Panko bread crumbs
1/2 cup cooked quinoa
1 1/2 cups cheese(Parmesan, cheddar, whatever you like)
1 tbs minced garlic or fresh garlic
1/8 tsp salt
Make mixtures into small patties and place onto a greased cookie sheet.
Put cookie sheet in fridge for 20 minutes to help the patties set.
Preheat the oven to 400.
Bake for 20 minutes, flipping after 10 minutes.
Remember how I did all that prep work earlier in the week. Well, this used up the last of the fresh ingredients in my fridge.

***I have tried this recipe using diced Kale as well as diced broccoli.
Melt a small amount of butter in a skillet. Put fritter in skillet until warm and crispy:-)
