Amazing Last Minute Dinner 6/6


I’m always shocked at what I can accomplish when I focus my efforts on what I CAN get done versus the amount of time I could spend trying to think of a reason why I SHOULDN’T make dinner.

It’s Friday night, 5:00 p.m…we’re all hungry…what to do what to do…Luckily for me, I keep our freezer stocked with protein and our produce box had been delivered but not unpacked.

I went to work! I grabbed four tilapia filets out of our freezer. The tilapia fillets that we have are pretty thin, so they thaw really fast in water.

While those were thawing, I decided to make skillet potatoes and steamed zucchini. I filled the other half of my sink with water and let my kids wash the potatoes for me.

While my kids were washing the potatoes, I put two non stick skillets on the stove, each with a pad of butter. I turned the first skillet on for the butter to start melting, then grabbed a potato sliced it thinly, them as I cut them, put them into the skillet.

Once I had the potatoes cooking, I drained the sink that had the fish thawing in cold water. I turned the second skillet on for the butter the melt and began to prep the fish(getting them out of their individual packets), then by the time that was done, the butter was melted and the pan was ready for the fish.

I put the fish in the skillet, gave each filler a squirt of lemon juice(I would love fresh lemon, but I don’t always have that so I make do), and the out the lid on that skillet.

So, now I’ve got the fish going, the potatoes going and giving those An occasional stir, and then I grab my cutting board and two small zucchinis and slice them up.

How do I cook squash/zucchini? I simply slice it, put it in a microwaveable dish that has a cover, add about 1/2 cup of water and cook for 5 minutes in the microwave on high.

So, the fish has been cooking while I was chopping the zucchinis and prepping all that. It’s time to flip the fish and remove the cover(start cooking off the excess liquid and give the other skillet with potatoes another stir.

By the time the zucchini is done in the microwave, the fish is done and so are the potatoes!!! PERFECT!!!

Now for the last minute seasoning:


This stuff is AMAZING!!!! OMG!!!

I sprinkle this…just this and nothing else on both the potatoes and zucchini and it’s simply delicious!!!!

We all loved this simple meal. Nothing fancy…just delicious!

I love to figure things out and to create.
